Apricot Bar Cookies
1cup granulated sugar 3/4 cup light brown sugar 1 tablespoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 1/2 sticks unsalted butter You can add a litle more butter if the mix is too dry. Don't overwork the ingredients, and if you want you can do this all in a bowl with your fingers or a whisk. Place this mixture into a brownie pan, and bake at 350 degrees for about 8 minutes. Take it out and let it cool. It shouldn't look like a cake, more like a mistake.
2 cans of pitted apricots (in syrup), drained and chopped fine 1 cup pecans chopped fine 1 cup dark brown sugar 1 tablespoon vanilla or a favorite liquor Remove, let cool and then cut into 1 x 2 inch bars. Dust with powdered sugar.
