Apricot Bar Cookies

You will need . . .


2 cups flour

1cup granulated sugar

3/4 cup light brown sugar

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 sticks unsalted butter

Mix all ingredients together in a Cuisinart. using short bursts of power, mix the ingredients so they become crumbly, and when pinched together, stick.

You can add a litle more butter if the mix is too dry. Don't overwork the ingredients, and if you want you can do this all in a bowl with your fingers or a whisk.

Place this mixture into a brownie pan, and bake at 350 degrees for about 8 minutes. Take it out and let it cool. It shouldn't look like a cake, more like a mistake.

Then take . . .


4 egg yolks

2 cans of pitted apricots (in syrup), drained and chopped fine

1 cup pecans chopped fine

1 cup dark brown sugar

1 tablespoon vanilla or a favorite liquor

Mix these ingredients together. It should be a wet mixture. Pour it carefully over the partially baked ingredients and spread to cover. Put back in the 350 degree oven for at least 20 minutes

The top should look like it would crack if you touched it. Leave it in the oven and keep checking until the top is evenly colored.

Remove, let cool and then cut into 1 x 2 inch bars.

Dust with powdered sugar.
