Banana Cream Pie

You will need:

1 12-inch springform pan

2 sticks unsalted butter

1 half bag chocolate chips

3 ripe bananas

1 1/2 cups all purpose flour

about 1 1/2 cups sugar

salt

milk

1 pint heavy cream

5 egg yolks

vanilla





Crust

Preheat oven to 350

In a bowl, mix with your hands one stick of butter, 1 1/2 cups flour, pinch of salt, 2 tbsp heavy cream and 3/4 cup granulated sugar

Mix it well, squeezing it with your hands until it forms a dough that is not too wet or too dry. (adjust with flour or cream)

Then take this dough and press it into the spring form pan so that it covers the bottom and two thirds of the way up the sides

Don’t worry about even thickness, just make sure there are no holes

Bake this for about 12 minutes

The edges of the sides should just start to brown

Take it out and let it cool


Custard

In a heavy sauce pan mix together before heating

1/3 cup sugar

2 tablespoons flour

5 egg yolks

1 1/3 cups milk

1/2 cup heavy cream

Place on the stove and slowly heat up, stirring with a whisk constantly until it starts to thicken.

Take off the heat and continue to stir. It should continue to thicken.

Add one tbsp butter and 2 tbsp vanilla
then let it cool in the refrigerator.


Chocolate Ganache

5-6 ounces chocolate chips

Half a stick of butter

Place these in a microwave safe bowl and nuke for about 45 seconds.

Mix.

It should look like smooth melted chocolate


Bananas

Peel and cut the bananas into 1/4 inch round pieces.

Whipped cream

Pour remaining cream into a bowl and add remaining sugar.

Whisk until you have made whipped cream.

Then add 1 tbsp vanilla and whisk a little more


Assembling


With the crust still in the pan:

Put bananas in.

Pour custard over.

Pour chocolate over

Pour whipped cream over and smooth.

Place in the refrigerator for about an hour, then open the springform pan and serve.
