| Carrot Cake 2 cups of flour 2 teaspoons of baking powder 1 1/2 teaspoons of baking soda 2 teaspoons of cinnamon 2 cups of sugar (or 1 1/2 cups of honey) 1 cup of salad oil 4 eggs 2 cups of grated carrots 8 1/2 ounce can of grated pineapple, drained. 1/2 cup of chopped nuts Sift the dry ingredients. Add sugar, oil and eggs. Mix well. Add carrots, pineapple and nuts. Bake at 350 degrees for 30 to 40 minutes. (Use 12 inch pan, or two 8 or 9 inch pans, greased.) Icing * Cream together: 1/2 cup of butter 8 ounces of cream cheese 1 teaspoon of vanilla 1 pound of powdered sugar * Don't forget icing - - it sets the cake off. |
