Corned Beef Brisket With Baby New Red Potatoes

(That's a generic corned beef picture, just for an idea.)

 

1 corned beef brisket (lean)

1 garlic bulb

bay leaves

cloves

1 to 2 pounds baby new red potatoes (scrubbed) cut into small (bite size) cubes

1. Preheat oven to 350 degrees.

2. Remove brisket from package --DO NOT RINSE

3. With the fatty side up, cut slices (about a half-inch deep) horizontally across the width of the brisket.

4. Cut garlic bulb into thin slices.

5. Place garlic slices within the horizontal cuts on the brisket (about 4 garlic slices per cut.

6. Sprinkle cloves over brisket and add 2 or 3 bay leaves on top.

7. Cover with foil and bake for 40 minutes.

8. After 40 minutes, place the cubed potatoes around the brisket. re-cover with foil.

9. Lower oven to 300.

10. Bake until done (cut a little slice and taste it to see if it’s ready).
