Low Fat Marinara Sauce

 

2 to 3 pounds of ripe plum tomatoes

1 tablespoon of minced garlic

olive oil

fresh basil and thyme

red pepper flakes

sliced button mushrooms if desired

 

1. Wash and chop the tomatoes.

2. Heat the olive oil (just enough to coat the bottom) in a non-reactive pan over a low to medium flame.

3. Add minced garlic and saute to a light golden brown.

4. Add chopped tomatoes.

5. Stir, and let cook for 15 minutes.

6. Add basil, thyme and red pepper flakes to desired taste.

7. Add onion powder (optional)

8. Add seasonsalt or salt to taste.

9. Let cook for another 30 to 40 minutes on low.

10. Add sliced mushrooms. cook another 15 minutes.

Serve over your favorite pasta, with wine.

(You can add a little red wine while cooking, but it will change the taste, so consider it an experiment).
