Virtually Foolproof Peach Cobbler

Ingredients

 

7 or 8 ripe peaches (depending on size of peaches)

1 cup SELF RISING flour

1 cup sugar

1 stick butter

1 egg

 

Instructions

 

Preheat oven to 350.

Peel and slice fruit.

Cover the bottom of a 10” glass baking dish with the fruit. Fruit should be about 1” deep in the dish.

In a bowl, mix the SELF RISING flour and sugar.

Stir in the egg. (The mixture will be crumbly. You may think, “hmm, did I forget an ingredient?” Don’t worry; this is how it is supposed to look!)

Spread the mixture evenly over the fruit.

Melt the stick of butter until liquid. Drizzle over the flour/sugar/egg mixture.

Bake for about 35-40 minutes or until top is golden brown.

 

Serve with dollop of whipped cream or (vanilla or coffee) ice cream.

Serves about 6.

 

Variations

 

Add about a pint of blueberries to the above. This is a damn near unbeatable combo.

This recipe also works with apples (add a little cinnamon to the apples).

 

Notes

 

- This recipe can be doubled.

- This dish does not keep well past the day it is made so make sure to invite enough people over to finish it off.

- In the dozen or so years that I have been making this cobbler, there has NEVER been an instance when I served it and wasn’t asked for the recipe. This is true. I’ll bet it happens to you, so keep this recipe handy!
