Chocolate Cake (Vegan)

 

3 cups flour

2 cups sugar

6 tablespoons cocoa

2 tablespoons baking soda

1 teaspoon salt

Mix, adding:

3/4 cup vegetable oil

2 tablespoons vinegar

2 teaspoons vanilla

2 cups cold water

 

Bake in a two 9-inch circular pans

or a 9 x 13 pan, at 350 degrees

for 35 to 40 minutes.

 

Top with powdered sugar or plain

frosting made with vegetable shortening.

 

If you want to ease up a little on veganness:

 

Top with a simple ganache:

Add 1 cup of chopped milk chocolate

to 1 cup of hot (not boiling) heavy cream.

Remove from heat and stir until smooth.

 

Pour over cake and chill.
